Instructions

  • Heat oven to 375 F. Spray baking pan with oil.
  • Pour egg whites into baking pan and sprinkle with salt and pepper. Bake for 25 - 30 min or until eggs are cooked through.
  • Make sun dried tomato spread by combining cream cheese and sun-dried tomatoes in food processor. Pulse a few times until blended with small chunks of tomatoes remaining. Season with salt and pepper.
  • Cook whites until set
  • Sautee spinach in olive oil until wilted
  • Assemble wraps. Spread cream cheese on wrap, sprinkle with spinach and feta. Place eggs at one edge of wrap and roll.
