Instructions

  • Cook jumbo pasta shells according to the packaging instructions.
  • Cook black beans until soft.
  • Preheat the oven to 350 degree Fahrenheit.
  • Heat a non stick pan on stove; spray some olive oil and saute onion.
  • Add minced chicken and cook over medium heat for 4-5 minutes.
  • Add tomato sauce, corn and cooked black beans to it, mix well.
  • Add olives, salt and black pepper to adjust the seasoning.
  • Stuff the pasta shells with this prepared chicken mixture.
  • Spray some olive oil on the baking tray; place the stuffed pasta shells on it.
  • Drizzle some tomato sauce on the top of the shells and bake while covering the tray for 20- 30 minutes.
  • Serve hot.
