Instructions

  • You first need to prepare sweet potato hash using a half chopped sweet onion, 1 tsp olive oil, a pinch of kosher salt, 1 medium sweet potato that is cut into small pieces and 1 tbsp bacon bits
  • Add the egg white and egg into a bowl and scramble it. Add a dash of pepper and salt into the mixture
  • Add this egg mixture into the skillet containing potatoes
  • Stir the mixture using a spatula once the eggs start setting. Until the eggs are completely cooked, keep stirring. Once done, serve the dish.
