Instructions

  • Cook onion and sausage in a large non-stick skillet over medium heat until the sausage is no longer pink.
  • Once the sausage is cooked, break it up and drain excess fat/moisture from the skillet.
  • Now add water, noodles, zucchini and spaghetti sauce. Stir well.
  • Bring the above mixture to a boil.
  • Then reduce heat. Simmer until noodles are tender. Stir occasionally.
  • In a bowl, combine parsley, parmesan cheese and ricotta cheese.
  • Add a couple of tablespoons of this mixture to the pasta mixture in the skillet.
  • Now sprinkle mozzarella cheese over the top and slowly simmer until cheese has melted.
  • Serve immediately.
