Instructions

  • Cut the chicken in cubes.
  • Heat oil in a large skillet and sauté onion and garlic until translucent.
  • Add chicken cubes and cook on medium heat until no longer pink.
  • Sprinkle curry powder, salt, pepper and add coconut milk, stir to combine.
  • Bring to a boil and reduce the heat to low, cover and let simmer for 7-8 minutes.
  • When the chicken is cooked through, remove from the heat and serve with rice or noodles.
