Instructions

  • Process shallots, lemongrass, garlic, ginger and chilies in a food processor until smooth.
  • Heat oil in a large skillet and cook the spice paste. Also add cinnamon, cloves, star anise and cardamom. Stir and cook until fragrant.
  • Add beef and cook for 2-3 minutes while stirring.
  • Add coconut milk, tamarind paste, salt and water, stir and cook for 2 minutes.
  • Add finely chopped kefir lime leaves. Mix to combine all the flavors.
  • Reduce the heat to low, cover the skillet and let it simmer for 40 minutes until the beef is soft and the gravy is thick.
