Instructions

  • First the salsa:
  • Chop the onion, avocado, tomato, garlic and basil and mix in a bowl with the olive oil and half the lime juice
  • The fish:
  • Season with salt and pepper and fry in a pan with some olive oil for about 3 minutes on each side
  • Squeeze the remaing lime juice over the fish before taking it out of the pan
  • The dressing:
  • Mix the greek yoghurt with the honey and add some seasoning to your own flavour
  • To serve:
  • Spread the dressing on 4 tortillas, add some fresh spinach leaves
  • Divide the fish over the tortillas
  • Add the salsa and enjoy
