Instructions

  • For the dip – whisk together yogurt, grated cucumber, salt and pepper in a bowl. Keep in the refrigerator until serve.
  • Heat the oil in a large non-stick pan over medium heat. Add onion, garlic and bell pepper. Stir and cook until soft.
  • Add spices – coriander, cumin and red chili powder. Mix well.
  • Add garbanzo beans and cook for 5 minutes while stirring.
  • Add cilantro, salt and pepper. Mix well.
  • Place one tortilla on a plate and spoon on garbanzo beans mixture. Roll up the tortilla tightly.
  • Serve with the cucumber and yogurt dip.
