Instructions

  • To make the meatballs – combine ground turkey, 1 tablespoon chopped onion, garlic, salt, bread crumbs, cheese, basil, parsley, pepper and egg in a large bowl.
  • Shape into tiny meatballs, roughly ½ inch in diameter.
  • Heat oil in a large non stick pan and shallow fry the meatballs while stirring until brown from all the sides.
  • When done, place the meatballs on a paper towel and set aside to absorb excess oil.
  • To make the soup – sauté remaining onions in the same pan and oil, until translucent.
  • Add garlic and carrot, cook for about 4-5 minutes.
  • Add broth and bring to a boil.
  • Add meatballs, spinach, salt and pepper. Cover the pan and turn down to simmer for about 30 minutes.
  • Serve hot with Italian bread.
