Instructions

  • Bring water to a boil over high heat. Add green beans and cook for 5 minutes. Remove from the heat, drain and set aside.
  • Heat half a teaspoon of oil in a non-stick pan and toast panko for 2 minutes until it’s crisp. Remove from the heat. Add lemon zest and a pinch of salt. Set aside.
  • Heat the remaining oil in a skillet. Add green beans and sauté for 2-3 minutes. Add lemon juice, salt, pepper and almonds. Cook for 1 minute and remove from the heat.
  • Transfer to a serving plate, sprinkle toasted panko on the top and serve immediately.
