Instructions
- Prepare the grill to medium heat.
- In a medium bowl, mix lemon juice, lemon rind, sugar, peanut butter, fish sauce, salt, curry powder, coriander and garlic cloves. Stir the ingredients until you get a smooth mixture.
- Now add pork to the mixture and toss for uniform coating. Keep it aside for a few minutes.
- To prepare sauce, take another bowl and mix 1 ½ tbsp sugar, rice vinegar, cilantro, lime juice, Mirin sauce fish sauce, and Serrano pepper. Now add roasted peanuts and stir well.
- Take skewers and thread pork pieces uniformly. Then place the skewers on the heated grill that is lightly coated with cooking spray. Grill both the sides for a few minutes. Serve hot with sauce.
