Instructions

  • In a bowl, combine salt, black pepper, 2 tbsp brown sugar, mustard and paprika. Add chicken and toss to coat uniformly. Keep it aside for an hour to marinate.
  • In a bowl, mix salt, black pepper, remaining brown sugar, red pepper, ketchup and vinegar. Whisk the ingredients gently. Set aside ¼ cup of this sauce and pour the remaining sauce over chicken. Cover and cook for an hour.
  • Toss cabbage with reserved sauce. Cover and set it aside. Transfer chicken on to a cutting board and allow it to cool slightly.
  • Discard bones from chicken and shred meat. Transfer the shredded meat to a bowl. Now pour sauce over meat.
  • Divide meat equally between buns and top it with cabbage mixture and bun tops.
  • Serve hot.
