Instructions

  • Set the oven temperature to 350 degrees Fahrenheit / 175 degrees Celsius.
  • In a large bowl, combine crushed tortilla chips, salt, black pepper, and garlic powder, cumin and chipotle salsa. Set the mixture aside for at least 10 minutes.
  • In another bowl, combine ground beef, eggs and cheddar cheese.
  • Coat an aluminum foil with cooking spray.
  • Form 9*5” loafs out of the beef mixture. Place the meatloaf in a pan and bake for 50 minutes at the set temperature.
  • In another bowl, combine ketchup, salt, 1 tbsp salsa and lime juice. Pour this mixture over meatloaf.
  • Continue to bake at the set temperature for another 20 minutes.
  • Set the meatloaf aside for 5 minutes before serving.
