Instructions

  • To prepare soup, heat a little oil in a pan over medium heat. Add pancetta and saute for a couple of minutes.
  • Add garlic, celery and onion. Saute until the ingredients are tender. Now add chicken broth, bay leaf, black pepper, cannellini beans and water. Bring the mixture to a boil. Reduce heat and simmer for a few minutes.
  • To prepare Gremolata, mix garlic, lemon rind and parsley in a small bowl. Sprinkle this mixture over soup.
  • Serve hot.
