Instructions

  • Preheat the oven to 450 degree F or 225 degree C. Lightly oil a baking dish and set aside.
  • Wash and cut the zucchini in half lengthwise and scoop out the seeds from the center with a spoon. Place the scooped zucchini in the baking dish.
  • To prepare the stuffing, combine chopped parsley, basil, garlic, ricotta cheese, parmesan cheese, grated carrot, lemon juice, salt and pepper in a bowl.
  • Now fill the stuffing in the zucchini boats. Bake for 15 minutes.
  • Remove from the oven and serve creamy zucchini boats immediately.
