Ingredients
- 1 cup, chunks Pineapple, raw, traditional varieties
- 2 package Vitasoy USA Azumaya, Extra Firm Tofu
- 1 cup cooked brown rice
- 1 medium Bell pepper (green/yellow/red)
- 1 cup Peas, green, frozen, cooked, boiled, drained, without salt
- 1 cup strips or slices Carrots, raw
- 1 tbsp chopped Onions, raw
- 1 large whole Tomatoes, red, ripe, raw, year round average
- 1 tbsp Spices, curry powder
- 1 tbsp Spices, ginger, ground
- 1 tsp Spices, chili powder
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
- 1 cup Coriander (cilantro) leaves, raw
Instructions
- Wash and cook the brown rice according to the package instructions. Set aside to cool a bit.
- Cut the tofu in cubes.
- Heat the oil in a nonstick skillet and sauté tofu until golden brown. Remove the tofu from the skillet.
- Cook the onions in the same skillet until translucent. Add vegetables, tomatoes, ginger paste, curry powder, red chili powder and salt. Cook for 2-3 minutes.
- Add cooked rice, tofu and chopped pineapple stir and cook for 1 minutes.
- Add cilantro and mix all the ingredients.
- Serve hot.
