Ingredients
- 0.5 cup, shredded Cheese, mozzarella, nonfat
- 1 1 cup Water
- 1 small Onions, raw
- 1 tbsp Parsley, fresh
- 0.5 cup, chopped Squash, summer, zucchini, includes skin, raw
- 0.4 1 Package Italian turkey sausage links
- 2 tbsp Cheese, parmesan, dry grated, reduced fat
- 0.5 cup Cheese, ricotta, part skim milk
- 2 1 cup Whole wheat egg noodles
- 3 serving 1/2 cup Sauce, pasta, spaghetti/marinara, ready-to-serve, low sodium
Instructions
- Cook onion and sausage in a large non-stick skillet over medium heat until the sausage is no longer pink.
- Once the sausage is cooked, break it up and drain excess fat/moisture from the skillet.
- Now add water, noodles, zucchini and spaghetti sauce. Stir well.
- Bring the above mixture to a boil.
- Then reduce heat. Simmer until noodles are tender. Stir occasionally.
- In a bowl, combine parsley, parmesan cheese and ricotta cheese.
- Add a couple of tablespoons of this mixture to the pasta mixture in the skillet.
- Now sprinkle mozzarella cheese over the top and slowly simmer until cheese has melted.
- Serve immediately.
