Ingredients
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 1 1 cup Water
- 5 loin, whole Pork loin, Tenderloin, trimmed, separate fat and lean only.
- 4 cup Tomatoes, red, ripe, cooked, stewed
- 2.52 cup Hominy, canned, white
- 1 1 tsp Southwest Chipotle Salt-Free Seasoning Blend
- 0.24 cup Coriander (cilantro) leaves, raw
Instructions
- Heat a saucepan on a medium heat. Lightly coat it with cooking spray.
- Spread pork pieces evenly on the pan. Add chipotle seasoning blend. Coat all the ingredients evenly with cooking spray.
- Cook pork until it becomes brown.
- Stir in tomatoes, water and hominy. Bring the mixture to boil.
- Reduce the heat and simmer for at least 20 minutes.
- Add cilantro and serve immediately.
