Ingredients
- 1 dash Salt, table
- 1.5 tbsp Vegetable oil
- 2 tbsp Brown Sugar
- 0.8 cup Pear nectar, canned, without added ascorbic acid
- 1 piece Pear, small, skin on
- 1 cup All-Purpose Flour
- 2 large Egg, whole, raw, fresh
- 2 tsp Leavening agents, baking powder, low-sodium
- 3 tsp Lemon rind, grated
- 0.5 fl oz Lemon juice, raw
- 0.5 tsp Spices, nutmeg, ground
- 1 1/2 cup low-fat granola
- 1 unit Wheat flour, whole-grain, soft wheat
Instructions
- Set the oven temperature to 350 degrees Fahrenheit / 175 degrees Celsius.
- Into a bowl, combine pear nectar, lemon juice, eggs, grated lemon rind and vegetable oil.
- Now add wheat flour and all-purpose flour and stir continuously so that no lumps are formed.
- Add salt, nutmeg, baking powder, granola and pears into the mixture and mix well.
- Add the flour mixture into the egg mixture and stir well to form a thick and consistent batter.
- Prepare muffin cups according to your requirements.
- Pour the batter evenly across the muffin cups.
- Bake the muffins for about 20 minutes or until they become golden brown.
- Remove the baked muffins and allow them to cool.
