Crabmeat is a soft and mild flavored seafood that is extremely rich in omega -3 fatty acids, protein and minerals. In this recipe crabmeat paired well with sweet corn to make a perfect puff that can be served either for breakfast or snacks. Ingredients
- 1 cup Crabmeat, drained, flaked
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 cup All-Purpose Flour
- 2 large Egg, whole, raw, fresh
- 1 tbsp Spices, onion powder
- 1 tbsp Spices, garlic powder
- 1 tsp Leavening agents, baking powder, low-sodium
- 1 tbsp Spices, paprika
- 1 cup chopped Onions, young green, tops only
- 1 oz Cheese, parmesan, dry grated, reduced fat
- 1 tsp Seasonings
- 1 tsp Oil, olive, salad or cooking
- 1 tsp Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 packet Sauce, sour cream, dehydrated, dry
Instructions
- Preheat the oven to 400 degree Fahrenheit (200 degree Celsius) . Spray mini muffins tin with cooking oil, keep aside.
- Heat oil in a pan and cook green onions, bell pepper, and sweet corn until soft. Season with salt and pepper and remove from the heat.
- Take a large bowl and combine all the dry ingredients along with shredded cheese and mix.
- In a separate bowl whisk together eggs, heavy cream and sugar. Add to the dry ingredients along with cooked sweet corn mixture.
- Mix thoroughly, add crab meat and gently mix with the dough.
- Spoon the dough mixture to the muffin cups and bake for 20 minutes until puffed.
- Remove from the oven and let it cool before serving.
