Ingredients
- 1 ounce Oat flour, partially debranned
- 1 ounce Wheat flour, whole-grain, soft wheat
- 2 scoop Vanilla Protein Powder
- 1 tsp Leavening agents, baking powder, low-sodium
- 1 tsp Leavening agents, baking soda
- 1 tbsp Spices, cinnamon, ground
- 1 1 cup Almond Milk, Original, Unsweetened
- 1 tsp Oil, coconut
- 1 100 gr Mango, fresh, fruit, lowfat
- 1 tbsp Honey
- 1 tbsp Vanilla extract
Instructions
- Take a medium size bowl and combine oatmeal, flour, baking powder, baking soda, cinnamon and protein powder.
- In another bowl whisk together milk and vanilla extract.
- Combine the two mixtures and whisk until batter is smooth.
- Heat a non stick pan over medium heat. Spread the oil and pour the batter ½ cup at a time and cook the pancake on low heat for 2-3 minutes.
- Flip the pancake when golden brown on the bottom and cook on the other side in the same manner.
- Remove to a plate and set aside.
- To prepare the topping, combine honey and mango cubes in a small sauce pan and cook over medium heat.
- Cook until thick, or the mango is sticky and golden.
- To serve, take a pancake and place honey glazed mango on the top.
