Sardines taste best with this fresh salsa made with mint, lemon juice and onions as it kills the strong fishy flavor of sardine.

Ingredients
- 1 cup Fish, sardine, Pacific, canned in tomato sauce, drained solids with bone
- 1 cup, chopped Onions, raw
- 1 cup chopped Parsley, fresh
- 1 fl oz Lemon juice, raw
- 1 4-5 leaves Mint Leaves, green, raw
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
Instructions
- Preheat the grill to high heat.
- Place the sardines on a baking sheet and drizzle with a little olive oil.
- Grill 3-4 minutes per side until the skin begins to brown. Remove from the grill and sprinkle little salt and pepper.
- Meanwhile prepare the salsa, finely chop the onion, parsley and mint leaves. Add remaining oil, salt and pepper. Mix all the ingredients and let it set for 5-10 minutes to develop the taste.
- Serve the salsa over the grilled fish.
