I love this easy, healthy and light fish balls, snow peas and noodle soup recipe. Prepare the fish balls with boneless white fish of your choice or buy prepared fish balls from the market for the authentic taste. The soup is extremely healthy and easy to digest. It is loaded with lean protein, complex carbohydrate and micro nutrients. I add snow peas to my recipe to make my soup even healthier. Feel free to choose your pick of vegetable to add fiber to the soup.

Ingredients
- 1 fillet Fish, salmon, Atlantic, wild, raw
- 1 ounce Snow peas, trimmed
- 1 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 1 tbsp Spices, ginger, ground
- 1 tsp Soy sauce made from soy (tamari)
- 1 tbsp chopped Garlic
- 1 tsp Lemon rind, grated
- 1 tbsp Spices, allspice, ground
- 1 cup Coriander (cilantro) leaves, raw
- 1 oz Rice noodles, dry
- 1 dash Salt, table
- 1 tbsp Spices, pepper, black
- 1 tbsp Brown Sugar
Instructions
- Add stock, ginger, all spice powder, sugar and soy sauce in a large deep sauce pan. Place over high heat to boil the stock then let it simmer for 15 minutes over low heat.
- Meanwhile place fish, lemon zest, coriander and garlic in a food processor and mix. Add salt and pepper to the fish mixture and roll into 1 inch diameter balls.
- After letting the stock boil for 15 minutes, gently add the fish ball to the stock and cook on low heat for 7-8 minutes.
- Meanwhile cook the noodles according to the package instructions. Drain and set aside.
- Add snow peas to the stock mixture and cook for 2-3 minutes until tender. Turn off the heat.
- Place noodles in a serving bowl and ladle soup, snow peas and fish ball over them.
- Serve hot.
