Ingredients
- 0.99 lb Beef, chuck for stew, separable lean and fat, choice, raw
- 0.99 teaspoon Oil, industrial, canola, high oleic
- 0.99 tsp Spices, cinnamon, ground
- 0.99 tsp Spices, cloves, ground
- 0.99 tsp, ground Spices, cardamom
- 0.99 tsp, whole Spices, anise seed
- 2.01 tbsp Nuts, coconut milk, canned (liquid expressed from grated meat and water)
- 0.99 1 cup Water
- 5.01 tbsp chopped Shallots, raw
- 0.99 tbsp Spices, ginger, ground
- 9.99 gram Tamarind Pulp
- 0.99 4-5 leaves Keffir, Lime leaves
- 0.99 tsp Spices, chili powder
- 0.99 tbsp chopped Garlic
- 0.99 tbsp Lemon grass (citronella), raw
- 0.99 dash Salt, table
Instructions
- Process shallots, lemongrass, garlic, ginger and chilies in a food processor until smooth.
- Heat oil in a large skillet and cook the spice paste. Also add cinnamon, cloves, star anise and cardamom. Stir and cook until fragrant.
- Add beef and cook for 2-3 minutes while stirring.
- Add coconut milk, tamarind paste, salt and water, stir and cook for 2 minutes.
- Add finely chopped kefir lime leaves. Mix to combine all the flavors.
- Reduce the heat to low, cover the skillet and let it simmer for 40 minutes until the beef is soft and the gravy is thick.
