This super food recipe equals to strong muscles and healthy bones; I love this baked chicken breast, stuffed with spinach and cheese. The recipe is pretty simple and tasty, spinach and cheese supply high amounts of calcium, iron and fiber to the body. On the other hand the chicken is there cater to my protein needs for maximum muscle growth. Serve this recipe along with mashed sweet potato to make a complete meal.

Ingredients
- 1 fillet Chicken breast, low fat
- 1 cup Spinach, raw
- 1 oz Cheese, low fat, cheddar or colby
- 1 ounce Onions, raw
- 1 tsp Spices, garlic powder
- 1 tsp, ground Spices, oregano, dried
- 1 fl oz Lemon juice, raw
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
Instructions
- Preheat the oven to 375 degree Fahrenheit.
- Make a lengthwise slit in the center of the chicken breast to create a pocket for the stuffing.
- Heat the oil in a non stick pan and sauté onions until translucent. Add chopped spinach, salt and pepper.
- Cook until spinach is wilted, add cheese, cook for 1-2 minutes and turn off the heat.
- Season the chicken breast with salt, pepper, garlic powder and oregano. Stuff the spinach mixture inside the chicken pocket and close the flap tightly.
- Spray non stick oil to a baking pan and place the stuffed chicken breast in the baking pan.
- Bake for 30 to 40 minutes until golden brown.
- Remove from the oven, sprinkle lemon juice and serve.
