Have you ever tried cooked eggnog, liked it but refrain from this treat due to its high fat content? Try my version of cooked eggnog which is reasonably low in fat, instead. I avoid mixing cream with custard and use skim milk for the recipe in order to make it low in calories. This classic recipe is rich in protein, calcium and iron.

Ingredients
- 2 medium Egg, whole, raw, fresh
- 2 cup Milk, reduced fat, fluid, 2% milkfat, without added vitamin A and vitamin D
- 1 tsp Sugars, granulated
- 1 tsp Vanilla extract
Instructions
- Beat the eggs and sugar in a bowl until blended. Stir in 1 cup of milk.
- Cook this mixture in a heavy bottom pan on low heat while stirring constantly. Do not boil the mixture, cook slowly until thick.
- When the mixture is thick enough to coat a spoon with a thin film, remove from the heat.
- Add remaining milk and vanilla, stir well. Pour through a sieve and refrigerate until chilled.
- Serve chilled.
