This is a hearty desert recipe from the land of Jamaica; in which fresh grated coconut with a hint of ginger creates an awesome sweet and spicy flavored candy. These coconut drops are full of heart-friendly fats and antioxidants. Coconut provides fatty acids that burn off quickly, boost metabolism and promote fat loss in the body. Furthermore ginger is full of antioxidants, it detoxifies the body and cleans the digestive tract.

Ingredients
- 1 cup, shredded Nuts, coconut meat, raw
- 1 1 oz ginger, peeled and chopped
- 2 tbsp Brown Sugar
- 1 tbsp Spices, cinnamon, ground
- 10 gram Water
Instructions
- Place butter paper on a large plate and set aside for later use.
- Heat a small, non-stick pan over medium heat and heat 1 tablespoon of water. Add grated ginger, brown sugar, cinnamon powder and coconut.
- Reduce the heat to low and cook the mixture while stirring until the sugar begins to caramelize.
- When the mixture is thick and begins to stick to the spoon, drop one tablespoon of the mixture on the butter paper.
- Spoon the mixture on the paper one ‘drop’ at a time and let them cool.
- When cooled, remove the coconut drops from the paper and enjoy.
