Ingredients
- 1 fillet Chicken breast, low fat
- 1 cup Quinoa, cooked
- 1 cup Peas, green, frozen, cooked, boiled, drained, with salt
- 1 cup strips or slices Carrots, raw
- 1 stalk, large Celery, raw
- 1 tbsp, leaves Spices, thyme, dried
- 1 sprigs Parsley, fresh
- 1 tbsp chopped Shallots, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
Instructions
- Heat oil in a large sauce pan and cook chopped shallots, carrots and celery until tender. Add chicken cubes and thyme, stir and cook for 3-4 minutes.
- Add stock and quinoa, stir and bring to a boil. Reduce the heat to low, cover and let simmer for about 15 minutes while stirring occasionally.
- Add peas and cook for another 5 minutes.
- Add chopped parsley, salt and pepper. Stir and remove from the heat.
- Serve warm.
