Pork is not only rich in protein but also loaded with potassium and zinc. Only use pork tenderloin for this recipe as it contains minimum amounts of fat. The other star ingredient of the recipe is pineapple, it contains anti inflammatory properties. Pineapple also compliments the flavor of grilled pork and provides a tangy twist to the tacos.

Ingredients
- 1 loin, whole Pork loin, Tenderloin, trimmed, separate fat and lean only.
- 5 gram Ground cumin
- 1 tsp, leaves Spices, oregano, dried
- 1 tsp Spices, chili powder
- 1 cup, chunks Pineapple, raw, all varieties
- 1 tbsp chopped Onions, raw
- 1 cup Coriander (cilantro) leaves, raw
- 1 fl oz Lemon juice, raw
- 1 dash Salt, table
- 6 gram Peppers, jalapeno, raw
- 1 tsp Oil, olive, salad or cooking
- 1 tortilla Tortillas, ready-to-bake or -fry, corn
Instructions
- Take a bowl and combine pork tenderloin, oil, oregano, red chili powder, ground cumin and salt. Toss well and let it marinade for about 30 minutes.
- Preheat the grill to high heat and place the pork on the grill rack. Grill for 5-6 minutes each side, remove from the grill and let it stand for 5 minutes to cool a bit. Coarsely chop the pork and keep warm.
- Place the pineapple slices on a grill rack and grill for 5 minutes until lightly brown around the edges.
- Remove from the grill and chop. Add cilantro, onions, lime juice, and jalapeno. Toss well to combine.
- Warm the tortillas in a pan and spread on the serving plate. Place half of the pork and pineapple salad to each tortilla and serve with lime wedges.
