Ingredients
- 4 serving Nuts rice, almond, pumpkin, sun flower,
- 1 cucumber Cucumber, with peel, raw
- 1 cup cherry tomatoes Tomatoes, red, ripe, raw, year round average
- 2 tablespoon Oil, olive, salad or cooking
- 3 wedge yields Lemon juice, raw
- 3 tsp or 1 packet Mustard, prepared, yellow
- 1.52 cup, shredded Cheese, mozzarella, nonfat
- 1 unit Onion, red, raw
- 8 tbsp Olives, ripe, canned (small-extra large)
- 9 tbsp, chopped Basil, fresh
- 2 clove Garlic, raw
- 1 medium Bell pepper (green/yellow/red)
Instructions
- Cook the rice, follow the instructions on the package
- Mix the oil, lemon juice and mustard into a dressing, add pepper and salt to taste
- Dice the cucumber and slice the mozzarella.
- Mix everything and enjoy!
