Ingredients
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 0.25 tbsp Honey
- 0.5 slice, thin Pineapple, raw, all varieties
- 4 serving 2 slices Chicken breast, oven-roasted, fat-free, sliced
- 3 tbsp Mayonnaise, low sodium, low calorie or diet
- 0.5 wedge yields Lemon juice, raw
- 0.5 tsp Spices, curry powder
- 0.2 cup Currants, red and white, raw
- 0.5 cup, quartered or chopped Apples, raw, with skin
- 0.5 cup sections, with juice Grapefruit, raw, pink and red, all areas
- 0.5 oz Nuts, almonds, dry roasted, without salt added
Instructions
- In a large bowl, combine grilled chicken breasts, seedless red grapes, apple, pineapple and diced currants.
- Mix mayonnaise, curry powder, salt, black pepper, lemon juice and honey in a separate bowl.
- Pour the mayonnaise mixture over the chicken mixture and toss gently.
- Sprinkle with toasted almonds and serve immediately.
