Ingredients
- 1 cup Peas, green, frozen, unprepared
- 1 cup Asparagus, raw
- 1 cup SWANSON BROTH, Vegetable Broth
- 1 1 cup Water
- 1 4-5 leaves Mint Leaves, green, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
Instructions
- Heat the oil in a sauce pan over medium heat.
- Add the green pea and asparagus. Cook for 2-3 minutes.
- Add water and vegetable stock. Bring to a boil and reduce the heat to simmer for 10 minutes.
- Add the mint leaves, salt and pepper. Remove from the heat and then blend until smooth.
- Serve warm along with toasted bread.
