This is a perfect recipe to kick-start the day. I cook them frequently as a filling breakfast. The wholesome spinach provides the pancakes with a nice green color and packs a lot of iron. Ground ginger adds flavor and antioxidants. I add spices to the batter for some extra flavor. They are rich in fiber and low in fat, thus it helps in maintaining a healthy weight. Furthermore they are rich in complex carbohydrates, essential fatty acids, iron and calcium.

Ingredients
- 1 cup Spinach, raw
- 0.5 unit Wheat flour, whole-grain, soft wheat
- 1 tbsp, ground Seeds, flaxseed
- 0.3 tbsp Spices, ginger, ground
- 1 tsp Leavening agents, baking powder, low-sodium
- 1 dash Salt, table
- 0.5 1 cup Water
- 1 tsp Oil, olive, salad or cooking
- 0.2 clove Garlic, raw
Instructions
- Combine ground flax-seed with 1 tablespoon of warm water in a bowl and set aside.
- Process the spinach 2 tablespoon of water, garlic, ground ginger and salt in the food processor until they become a puree.
- Take a bowl to combine flour, flaxseed and water mixture, spinach puree and baking powder.
- Heat a non stick pan over medium heat and spray it with some oil. Pour ½ cup of batter in the pan and cook over low heat for about 3-4 minutes. Low heat will keep the pancake green in color.
- Flip the pancake and cook on the other side for 2-3 minutes.
- Place the pancake on a plate and serve with a dash of Greek yogurt.
