Ingredients
- 2 medium Egg, whole, raw, fresh
- 10 gram Pesto, red or green
- 1 oz Cheese, low fat, cheddar or colby
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 2 oz Bread, rye, toasted
Instructions
- Whisk together eggs, cheese, pesto, salt and pepper in a medium sized bowl.
- Heat the oil in a non-stick pan over medium heat. Pour in the egg mixture and scramble with a spoon.
- Cook while stirring for 2-3 minutes. Transfer to a plate.
- Toss 2 slices of crostini in the same pan for 30 seconds each side.
- To serve, place crostini on the plate and top with scrambled eggs.
