Ingredients
- 10 oz, boneless Fish, salmon, chinook, smoked
- 3 cup Baby Spinach
- 1 1 loaf ciabatta bread
- 1 tsp Lemon rind, grated
- 1 tbsp, drained Capers, canned
- 0.25 cup chopped Onions, young green, tops only
- 3 1 ounce Goat Cheese
- 0.75 cup Cheese, cream, low fat
- 1 unit Onion, red, raw
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 2 tablespoon Oil, olive, salad or cooking
- 1 1 tsp Minced garlic
- 3 tsp Dijon Mustard
- 1 lemon yields Lemon juice, raw
- 1 1 tbsp champagne vinegar
Instructions
- In a small bowl, mix garlic, 2 tsp Dijon mustard, 2 tbsp lemon juice and vinegar. Now add 2 tbsp olive oil and whisk the ingredients well to thicken the mixture.
- Add salt, pepper and red onions. Set the bowl aside for at least 30 minutes.
- Now add cream cheese, grated lemon rind, chopped capers, green onions, goat cheese, remaining Dijon mustard, lemon juice and pepper and mix well.
- Slice the ciabatta bread horizontally and spread cream cheese evenly across both the pieces. Now place salmon over cheese on the bottom piece of bread.
- Top it with marinated red onion and spinach. Place the top half of bread over the bottom bread piece and wrap them tightly.
- Cut the sandwiches into 4 equal pieces. Heat the grill to a high setting. Brush both the sides of bread with olive oil and keep it on the grill for at least 5 minutes. Now cut the sandwiches diagonally and serve immediately.
