A bowl of fried rice is the recipe which I crave the most for lunch. Sesame, scallop fried rice has the perfect combination of vegetables and brown rice that creates the magic of authentic flavors. Broccoli and snap peas are used in the recipe and increase the nutritional value of the meal. Tofu provides the kick of protein while Shiitake mushrooms provide healthy amino acids, minerals and antioxidants. In short the recipe is loaded with complex carbs, vitamins, minerals, fiber and antioxidants.

Ingredients
- 1 4 oz Sea Scallops
- 1 1 tablespoon sesame seeds
- 0.5 block Tofu, firm, prepared with calcium sulfate and magnesium chloride (nigari)
- 1 cup, chopped or diced Broccoli, raw
- 1 beans Beans, snap, green, raw
- 1 piece whole Mushrooms, shiitake, raw
- 1 cup Rice, white, short-grain, cooked
- 1 tbsp chopped Garlic
- 1 tbsp chopped Onions, raw
- 1 pepper Peppers, jalapeno, raw
- 1 tsp Soy sauce made from soy (tamari)
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Oil, sesame, salad or cooking
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 tsp Spices, onion powder
- 1 tsp Spices, turmeric, ground
Instructions
- Cook the brown rice according to the package instruction.
- Cut the tofu in cubes and season with turmeric powder, onion powder and soy sauce along with scallops.
- In the large skillet, heat sesame oil over medium heat. Add onion and garlic, cook until fragrant.
- Add mushrooms, snap peas, jalapeƱo and broccoli. Stir and cook until tender.
- Add tofu, scallops, salt and pepper. Stir and cook until all the liquid is evaporated.
- Add cooked rice and mix well.
- Remove from the heat. Garnish with fresh cilantro and sesame seeds. Serve warm.
