Kale is the powerhouse of antioxidants; it contains various nutrients that are needed by our body to perform well in an active lifestyle. It is a rich source of vitamin A, C and K. Feta and kale stuffed wafers is a wonderful breakfast recipe which is loaded with protein, vitamins, minerals, fiber and antioxidants. Feta cheese goes well with the kale and makes a great stuffing for the wafer.

Ingredients
- 2 ounce feta cheese
- 1 cup, chopped Kale, raw
- 1 medium Egg, whole, raw, fresh
- 1 oz Puff pastry, frozen, ready-to-bake, baked
- 1 tbsp chopped Onions, raw
- 1 tsp Spices, nutmeg, ground
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
Instructions
- Whisk together egg, salt and pepper. Set aside.
- Heat the oil in a non-stick skillet. Cook onion for about a minute. Add kale and cook for 2-3 minutes until tender.
- Add nutmeg powder and egg mixture. Stir and cook until eggs are done. Remove from the heat. Add crumbled cheese to the mixture.
- Heat wafer maker and grease with cooking oil.
- Place one pastry sheet on the plate and layer it with kale stuffing within ½ inch of the edges. Top with another pastry sheet and seal the edges firmly.
- Place filled pastry sheet in the centre of the wafer maker and close the lid. Cook for 4-5 minutes until golden brown. Carefully remove from the wafer makers.
- Serve warm with a nice dip.
