Given a chance I prefer savory oats with vegetables over sweet oats for breakfast. I cook my oats with mushrooms, onions, spices and herbs. This recipe is packed with nutrition and full of flavor. It is loaded with complex carbohydrates, vitamins, minerals and fiber. Mushrooms are exceptionally rich in nutrients like vitamin D, antioxidants, and essential amino acids. They also strengthen the immune system.

Ingredients
- 1 ounce Oats
- 1 cup, pieces or slices Mushrooms, white, raw
- 1 tsp Thyme, fresh
- 1 tbsp chopped Onions, raw
- 1 tbsp chopped Garlic
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
- 1 1 cup Water
- 1 tsp Oil, olive, salad or cooking
Instructions
- Bring water to a boil, add oatmeal. Stir and reduce heat to a simmer. Cook for 15 minutes while stirring occasionally until oats are soft and tender.
- Meanwhile heat the oil in a saucepan. Add onion and garlic and cook for 3-4 minutes. Add mushrooms and thyme sprigs cook until mushrooms turn golden brown.
- Add salt and pepper to the mushroom and cook until tender.
- Add cooked oatmeal and mix well with the mushrooms.
- Transfer to a serving bowl and garnish with fresh thyme leaves.
