Ingredients
- 1 small Squash, summer, zucchini, includes skin, raw
- 1 tbsp Cheese, parmesan, dry grated, reduced fat
- 0.5 oz Cheese, ricotta, part skim milk
- 0.2 cup grated Carrots, raw
- 1 clove Garlic, raw
- 1 sprigs Parsley, fresh
- 0.5 ounce Lemon juice, raw
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
- 1 leaves Basil, fresh
Instructions
- Preheat the oven to 450 degree F or 225 degree C. Lightly oil a baking dish and set aside.
- Wash and cut the zucchini in half lengthwise and scoop out the seeds from the center with a spoon. Place the scooped zucchini in the baking dish.
- To prepare the stuffing, combine chopped parsley, basil, garlic, ricotta cheese, parmesan cheese, grated carrot, lemon juice, salt and pepper in a bowl.
- Now fill the stuffing in the zucchini boats. Bake for 15 minutes.
- Remove from the oven and serve creamy zucchini boats immediately.
