Ingredients
- 1 oz Fish, tuna, fresh, skipjack, raw
- 0.5 ounce Rice noodles, cooked
- 1 leaf Spinach, raw
- 0.5 ounce Bell pepper (green/yellow/red)
- 1 cup Coriander (cilantro) leaves, raw
- 0.5 ounce Sauce, teriyaki, ready-to-serve, reduced sodium
- 1 tsp Oil, olive, salad or cooking
- 0.5 ounce Shallots, raw
- 1 ounce Water
- 0.5 ounce Lemon, juice, fruit, raw, citrus
- 1 clove Garlic, raw
Instructions
- Prepare the noodles per the package instruction, drain and set aside.
- Meanwhile, combine the tuna chunks with teriyaki sauce and lemon juice, toss well and set aside.
- Heat a large deep pan over medium heat, add oil and cook garlic and shallots for two minutes. Add tuna stir and cook for 1 minute.
- Add chopped vegetables and cook further until vegetables are tender.
- Add noodles, water and coriander leaves stir and cook for 2 minutes. Remove from the heat and serve warm.
