Ingredients
- 1 fillet Chicken breast, low fat
- 0.5 cup, chopped or diced Broccoli, raw
- 1 tsp or 1 packet Mustard, prepared, yellow
- 1 dash Salt, table
- 1 leaves Basil, fresh
- 1 ounce Toasted whole grain bread
- 1 tsp Oil, olive, salad or cooking
- 1 slice Carrots, raw
Instructions
- Heat a non-stick grill pan over medium heat and rub chicken breast with salt, pepper and mustard sauce.
- Spray some oil in the grill pan and cook the chicken breast until golden brown. It may take 5 minutes per side. Remove to a plate and shred with a fork or knife.
- Meanwhile prepare the vegetables; finely chop the carrot, broccoli and basil. Add shredded chicken to the vegetables along with the juices and toss well.
- Place the chicken salad on the whole wheat bread and serve along with fresh fruit salsa.
