Ingredients
- 1 head Lettuce, green leaf, raw
- 24 1 slice Sandwich bread
- 1 tsp Spices, chili powder
- 1 1/2 cup pineapple preserves
- 20 tbsp Sauce, barbecue, OPEN PIT, original
- 14 3 oz Rotisserie Chicken
Instructions
- After separating the chicken meat from the bones, chop it coarsely.
- Combine chili powder, pineapple preserves and barbecue sauce in a saucepan placed over medium heat.
- Add chicken to the saucepan and continue to cook for at least 5 minutes.
- Lightly toast the bread in a toaster. Remove chicken from heat.
- Spread out 8 slices of bread on the table and top each with a lettuce leaf. Add cooked chicken on top.
- Top with some more lettuce and cover with another slice of bread.
- Use toothpicks to secure the sandwiches and serve immediately.
