Ingredients
- 2 tsp Oil, canola
- 4 fillet Fish, catfish, channel, wild, raw
- 0.5 tsp Spices, paprika
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 0.1 gram Spices, pepper, red or cayenne
- 2 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 2 cloves Garlic, raw
- 2 tsp Thyme, fresh
- 0.5 cup chopped Celery, raw
- 0.75 unit Bell pepper (green/yellow/red)
- 0.75 cup, chopped Onions, raw
- 2 tsp Oil, olive, salad or cooking
- 1 slice Bacon, pre-sliced, reduced/low sodium, unprepared
Instructions
- Heat the bacon slice in a pan over medium heat for about 3 minutes and then remove it. Place on a paper towel to absorb excess fat.
- Now add thyme, celery, bell pepper, onion and olive oil in the pan and cook them for at least 5 minutes. Add garlic and continue to cook for a few more seconds.
- Once the vegetables are sufficiently cooked, add salt, red pepper and corn. Cover the mixture using a lid and allow cooking for about 8 minutes. Now add sliced bacon to the mixture.
- In a small bowl, mix salt, black pepper and paprika. Rub this mixture evenly over the fish.
- Heat a little canola oil in a large skillet over medium heat. Cook both the sides of the fish for at least 4-5 minutes.
- Serve the cooked fish topped with corn / tomato mixture.
