Ingredients
- 1 cup Cheese, parmesan, dry grated, reduced fat
- 4 tbsp Oil, canola and soybean
- 2 medium Squash, summer, zucchini, includes skin, raw
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 0.5 tsp, ground Spices, oregano, dried
- 4 piece Egg white beaten
- 0.5 tsp Spices, garlic powder
- 1 tsp Spices, paprika
- 3 cup All-Purpose Flour
- 7.9999999999998 1/2 cup Panko (Japanese Style Bread Crumbs
Instructions
- In a bowl, combine 2 cups flour, salt, garlic powder and paprika.
- In another bowl, mix 3 tbsp water and eggs.
- Add breadcrumbs in a blender and process for at least 15 seconds. Then combine the grounded breadcrumbs, salt, pepper, oregano and 4 tbsp flour in another bowl.
- Dredge batches of zucchini in flour mixture, followed by egg mixture and breadcrumb mixture.
- Set the oven temperature to 325 degrees Fahrenheit / 160 degrees Celsius.
- Pour oil into a shallow bowl and place it in the oven to fry zucchini for at least a couple of minutes.
- Drain excess oil by transferring the fried zucchini over paper towels.
- Sprinkle the fried zucchini with parmesan cheese and serve hot.
