Ingredients
- 1 dash Salt, table
- 1 tablespoon Oil, olive, salad or cooking
- 1 tbsp Tomato products, canned, paste, without salt added
- 1 medium whole Tomatoes, red, ripe, raw, year round average
- 0.5 tsp Spices, chili powder
- 0.25 tsp Spices, turmeric, ground
- 2 medium Bell pepper (green/yellow/red)
- 3 medium Onions, spring or scallions (includes tops and bulb), raw
- 1 1 tsp ginger-green chilli paste
- 1 dash asafoetida
- 0.1 tsp, whole Spices, cumin seed
- 1.25 cup Cheese, cottage, nonfat, uncreamed, dry, large or small curd
- 12 1 ear Baby corn
Instructions
- Heat a little oil in a non-stick pan and add asafetida and the cumin seeds. When the seeds start crackling, add capsicum, half portion of spring onion and ginger-green chili paste. Saute for at least a couple of minutes.
- Add the baby corn, salt, half portion of tomato puree, chili powder and turmeric powder into the mixture and saute for another 5 minutes so that the baby corn is cooked.
- Add the remaining spring onions and the tomato puree along with cottage cheese. Toss the ingredients gently.
- Garnish the dish with coriander and serve hot.
