This is a perfect lunch or takeout recipe which is healthy and easy to make. Garbanzo beans burritos with cucumber and yogurt dip is a wonderful combination of spicy burritos and a creamy dip. The beans are a great source of protein and fiber. They also contain a good amount of calcium, iron, magnesium and potassium. I have used canned beans to save time though fresh beans work best in the recipe. The dip prepared with yogurt and cucumber makes a nice low-fat sauce. It’s rich in digestive enzymes, calcium and fiber and goes well with burritos.

Ingredients
- 0.5 cup drained, rinsed Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water\~^CHICKPEAS (GARBANZO BNS,BENGAL GRAM),MAT SDS,CND,DRND,RNSD~
- 1 medium Bell pepper (green/yellow/red)
- 1 tbsp chopped Onions, raw
- 1 tbsp Ground cumin
- 1 tbsp Spices, coriander seed
- 1 tsp Spices, paprika
- 1 tsp Spices, chili powder
- 1 tbsp chopped Garlic
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
- 1 ounce Yogurt, Greek, plain, nonfat
- 1 medium Cucumber, peeled, raw
- 1 1 Large Tortilla La Tortilla Factory Low Carb High Fiber Tortilla, Large
- 1 tsp Spices, pepper, black
Instructions
- For the dip – whisk together yogurt, grated cucumber, salt and pepper in a bowl. Keep in the refrigerator until serve.
- Heat the oil in a large non-stick pan over medium heat. Add onion, garlic and bell pepper. Stir and cook until soft.
- Add spices – coriander, cumin and red chili powder. Mix well.
- Add garbanzo beans and cook for 5 minutes while stirring.
- Add cilantro, salt and pepper. Mix well.
- Place one tortilla on a plate and spoon on garbanzo beans mixture. Roll up the tortilla tightly.
- Serve with the cucumber and yogurt dip.
