Ingredients
- 1 cup, diced Potatoes, white, flesh and skin, raw
- 1 cup chopped Broccoli, raw
- 1 extra large Egg, whole, raw, fresh
- 1 ounce Milk, reduced fat, fluid, 2% milkfat, without added vitamin A and vitamin D
- 1 oz Cheese, low fat, cheddar or colby
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 oz Bread crumbs, dry, grated, plain
Instructions
- Place potatoes in a saucepan, cover with water and bring to a boil.
- Let it simmer for 10 minutes. Add broccoli and let it cook along with potatoes for 5 minutes. Drain potatoes and broccoli in a colander and set aside.
- Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Spray a baking pan with oil.
- Spoon potato and broccoli in the baking pan.
- Whisk together egg, milk, salt and pepper. Pour the egg mixture on the potato and broccoli. Bake for 30 minutes.
- Remove from the oven sprinkle bread crumbs and cheese. Bake for another 5-6 minutes until cheese melt.
- Remove from the oven and serve warm.
