Fruit Omelette [Bulkbites.com]

Once I tried this fruit omelette for breakfast it turned out to be pretty nice as a variation to the standard omelette. I stuffed it with mixed berries which are rich in vitamins, minerals and antioxidants.

Ingredients
- 1 extra large Egg, whole, raw, fresh
- 1 ounce Milk, reduced fat, fluid, 2% milkfat, without added vitamin A and vitamin D
- 1 ounce Cheese, cottage, nonfat, uncreamed, dry, large or small curd
- 1 tsp Spices, cinnamon, ground
- 1 tsp Oil, olive, salad or cooking
- 0.5 cup Frozen Mixed Berries
Instructions
- Whisk together the egg, milk and cinnamon in a bowl.
- Take a heavy bottom non-stick pan. Heat some oil over medium heat and add the egg mixture. Bake until the eggs have set.
- Reduce the heat to low. Spread the cheese and berries on top and fold the omelet in half. Cook for a minute until the cheese melts.
- Remove from the pan and serve warm.
