This is a very appetizing recipe that can be served as a quick but complete meal. The recipe is extremely low in calories but high in nutrition and flavor. A perfect blend of spices is used to cook the soup up to perfection. Prawns are rich in omega-3 fatty acids and protein. They also contain a good amount of minerals. Mushrooms go well with the soup and rich in antioxidants. I added whole-wheat noodles in the soup to make it filling and complete.

Ingredients
- 1 pack, 12 prawns Prawns, raw, uncooked cleaned and devained
- 1 cup, pieces or slices Mushrooms, white, raw
- 1 cup Soup, stock, chicken, home-prepared
- 1 ounce Whole wheat egg noodles
- 1 tbsp chopped Garlic
- 1 tbsp chopped Shallots, raw
- 1 tbsp Spices, ginger, ground
- 1 ounce Peppers, hot chili, red, raw
- 1 tbsp Sauce, fish, ready-to-serve
- 1 tbsp Vinegar, balsamic
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
Instructions
- Cook the noodles according to the package instructions. Drain and set aside.
- Meanwhile heat the oil in a saucepan. Add garlic, shallots, ginger and chili. Cook for 1 minute.
- Pour in the chicken stock and simmer for 5 minutes.
- Add the prawns, fish sauce, vinegar and mushrooms. Let it simmer for 5 more minutes.
- Add cooked noodles, salt and cilantro. Stir well and remove from the heat.
- Serve hot.
