Ingredients
- 0.3 serving Water
- 1 tbsp chopped Garlic
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 6 medium Sweet potato, cooked, baked in skin, without salt
- 0.5 cup, shredded Cheese, low fat, cheddar or colby
- 4.5 cup chopped Broccoli, raw
- 1.5 tablespoon Oil, olive, salad or cooking
- 0.4 cup Barley, pearled, raw
Instructions
- Set the oven temperature to 400 degrees Fahrenheit / 200 degrees Celsius.
- Bake potatoes as per the instructions.
- Place a large frying pan over medium heat. Lightly coat it with oil. Add garlic and cook for a few seconds.
- Add broccoli and water to pan and cook until the broccoli is crisp-tender.
- Add salt, pepper and barley and continue to cook for a minute. Add cheese.
- Top potatoes with the broccoli mixture and serve hot.
